Mashed Sweet Potatoes

Instructions

  1. Start boiling a large pot of salted water.

  2. Once boiling, add cut sweet potatoes and simmer for 15 minutes or until tender.

  3. Concurrently, melt 2 tablespoons butter with fresh sage in a small pan and sauté until fragrant.

  4. Gently warm the cream in a separate small pot.

  5. Drain sweet potatoes and return them to the pot.

  6. Incorporate the sage butter, remaining 2 tablespoons butter, warm cream, and spices.

  7. Lightly mash the potatoes; avoid over-mashing.

  8. Season with salt and pepper to taste, then serve.
