Instructions

  1. Blend garlic paste, cilantro, chiles, and lemon juice into a smooth paste.

  2. Place mutton, goat, or beef in a bowl, pour marinade over, mix to coat, and refrigerate during gravy preparation.

  3. Heat cooking oil in a heavy-bottomed pan over medium heat.

  4. Add chopped onions; sauté until pale golden brown.

  5. Stir in garlic and ginger pastes; sauté for one minute.

  6. Add tomato paste, powdered spices, and salt; mix well.

  7. Sauté the masala mixture until oil separates, about 10 minutes. Turn off heat.

  8. Transfer masala to a blender and process into a smooth paste without adding water; set aside.

  9. Reheat the pan over medium heat.

  10. Add marinated meat and sauté until opaque.

  11. Stir in the prepared masala and 1/4 cup boiling water.

  12. Simmer until meat is tender, adding water if needed for a thick, minimal gravy; if excess liquid remains, cook uncovered until reduced.

  13. Garnish with chopped coriander and serve with chapatis, rice, and kachumber salad.
