Marshmallow Fluff Recipe

Instructions

  1. Start boiling water in a small pot, ensuring it can hold a stand mixer bowl snugly without steam escaping.

  2. In a stand mixer bowl, combine egg whites, sugar, and corn syrup; whisk to mix.

  3. Place the bowl over the pot of simmering water, whisking constantly for 4-5 minutes until the sugar dissolves and the mixture reaches 160°F.

  4. Attach the bowl to a stand mixer with the whisk attachment. Add vanilla extract and cream of tartar.

  5. Beat the mixture, starting on low and gradually increasing to high speed, for 5-6 minutes until a glossy, sticky marshmallow cream with stiff peaks forms.

  6. Store the finished marshmallow cream in a covered container in the refrigerator for up to two weeks.
