Marinovannymi Gribami (Russian Pickled Mushrooms) Recipe

A favorite pickled mushroom recipe, traditionally served at Russian Christmas Eve Holy Supper.

Instructions

  1. Sterilize jars and lids.

  2. Combine oil, vinegars, garlic, parsley, and onion in a nonreactive saucepan; bring to a boil.

  3. Stir in salt until dissolved, then cool the brine to lukewarm.

  4. Place bay leaf pieces in the jar bottoms, then add prepared mushrooms.

  5. Pour the lukewarm brine over the mushrooms, filling to 1/4 inch from the top.

  6. Cap jars with sterilized lids and refrigerate for 24 to 72 hours, then serve chilled.
