Marinated Roast Beef

A savory beef roast is prepared by marinating an eye of round or rump roast in a blend of soy sauce, sugar, ginger, thyme, and garlic.

Instructions

  1. Preheat the oven to 325 F.

  2. In a large resealable bag, combine 3/4 cup water, 1/3 cup soy sauce, 2 tablespoons sugar, 1 teaspoon ground ginger, 1 teaspoon dried crushed thyme, and 1 minced garlic clove. Pierce a 3-pound boneless rump roast all over with a fork.

  3. Add the pierced roast to the bag, seal, and turn to coat. Refrigerate for at least 4 hours or overnight, turning the bag occasionally.

  4. Remove the roast from the bag, reserving the marinade, and place it on a rack in a shallow pan.

  5. Roast, uncovered, for about 2 hours.

  6. Meanwhile, bring the reserved marinade to a rolling boil in a saucepan and boil for 1 minute.

  7. Baste the roast with the boiled marinade during the final 30 minutes of roasting.

  8. Remove from the oven, tent with foil, and let rest for 3 to 5 minutes before slicing and serving.
