Marinated Grilled Chuck Roast Recipe

Instructions

  1. Prepare a gas or charcoal grill for indirect heat, setting the active burner to medium-high (400-475 F).

  2. Whisk balsamic vinegar, olive oil, shallot, garlic, parsley, Dijon, sugar, beef bouillon, salt, pepper, meat tenderizer, and 1/2 cup water in a bowl to create the marinade.

  3. Score one side of the chuck roast with 6-7 large cuts.

  4. Place the steak and marinade in a plastic bag, seal, massage, and refrigerate for 6-24 hours, ideally overnight.

  5. Sear both sides of the marinated steak over the hot side of the grill for a total of 10 minutes, flipping once.

  6. Move the steak to the cooler side, close the lid, and cook for 20-30 minutes, or until an internal temperature of 130-140 F for medium-rare is reached.

  7. Remove the roast from the grill, rest for 10 minutes loosely covered with foil, then slice against the grain before serving.
