Marinated Fried Tofu

A flavorful Marinated Fried Tofu dish combines dried and marinated tofu stir-fried with an assortment of vegetables.

Instructions

  1. Drain tofu thoroughly.

  2. Whisk together rice vinegar, light and dark soy sauces, olive oil, garlic, sesame oil, sugar, and chili paste for the marinade; refrigerate.

  3. Cut drained tofu into 1/2-inch triangles and dry-fry.

  4. Combine dry-fried tofu and marinade in a resealable bag; refrigerate overnight, turning occasionally.

  5. The next day, prepare vegetables. Remove tofu from bag and reserve marinade.

  6. Preheat a wok with 1 tablespoon oil over medium-high heat. Cook ginger until fragrant.

  7. Add onion and mushrooms; stir-fry for 2 minutes, adding Chinese rice wine if drying.

  8. Stir in bell pepper and baby corn. Stir-fry for 1 minute, then add tofu slices and heat through.

  9. Push ingredients to wok sides. Pour reserved marinade into the center and bring to a boil.

  10. Mix cornstarch and water, then add to boiling marinade, stirring to thicken.

  11. Combine sauce with vegetables and tofu. Adjust seasoning and serve.
