Marinated Boneless Chicken Thighs (Pargiot)
Savory marinated chicken thighs, flavored with soy sauce, red wine vinegar, lemon, and parsley, can be prepared by grilling or oven baking.

Instructions

Preheat the grill or oven to 325 F (170 C).

Arrange chicken thighs in a single layer in a baking dish or zip-top bag.

Whisk together the oil, vinegar, soy sauce, lemon juice, mustard, parsley, garlic, and pepper.

Transfer 1/4 of the marinade to a separate bowl, cover, and refrigerate.

Pour the remaining marinade over the chicken and refrigerate for several hours or overnight.

Remove chicken from the marinade (discard used portion).

Grill chicken for 5 to 8 minutes per side, brushing with the reserved, room-temperature marinade, until it reaches an internal temperature of 165 F (74 C).
