Instructions

  1. Start boiling 2 inches of salted water in a skillet.

  2. While water heats, wash asparagus, snap off tough ends, and remove any large scales.

  3. Combine chopped onion, vinegar, lemon juice, mustard, salt, and pepper in a bowl; whisk in oil for the marinade and set aside.

  4. Add asparagus to boiling water, simmer for 5-7 minutes until slightly crisp, then drain.

  5. Transfer drained asparagus to a dish, pour marinade over warm spears, and let cool at room temperature.

  6. Cover and refrigerate, then return to room temperature before serving plain or over lettuce.
