Instructions

  1. Preheat oven to 425 F.

  2. Whisk apple cider, brown sugar, and salt; marinate pork loin in this mixture in a sealed bag for 8 hours or overnight, then drain the pork.

  3. Rub the pork loin with Worcestershire sauce.

  4. Combine brown sugar, kosher salt, paprika, onion powder, sage, and chipotle chile pepper; coat the roast evenly with this blend.

  5. Place the pork loin, fat side up, on a roasting rack in a foil-lined 9x13-inch pan.

  6. Roast for 20 minutes.

  7. Reduce oven temperature to 350 F and roast an additional hour, or until the internal temperature reaches 165 F.

  8. Remove from oven, tent with foil, and rest for 15 minutes before slicing.
