Instructions

  1. Start boiling water for the brown sugar mixture.

  2. Caramelize white sugar in a heavy skillet over medium heat, swirling until it turns into an amber liquid, then set it aside.

  3. In a heavy saucepan, add brown sugar and pour boiling water over it to dissolve without stirring.

  4. Combine the reserved caramelized sugar with the dissolved brown sugar mixture in the saucepan and simmer, stirring frequently, until the syrup thickens.

  5. Remove from heat and whisk in butter and the desired extract.

  6. Use immediately or cool completely before storing in an airtight container.
