Instructions

  1. Clean and skin salmon fillets.

  2. Place fillets in a shallow dish, pour maple syrup over, and coat evenly.

  3. Season each side with salt and pepper, then cover and refrigerate for 24 hours.

  4. Prepare a smoker and set temperature to 200 F.

  5. Place fillets in the smoker and cook for 1 1/2 hours.

  6. Heat butter in a skillet.

  7. Transfer smoked fillets to the skillet and cook 2 minutes per side to glaze.

  8. Serve.
