Instructions

  1. Pat salmon fillets dry, remove any bones, and arrange in a dish.

  2. Whisk together maple syrup, lemon juice, soy sauce, garlic, ginger, and chili flakes.

  3. Pour the mixture over the salmon; marinate at room temperature for 20 minutes, flipping halfway.

  4. Heat oil in a griddle or cast-iron pan over high heat until hot.

  5. Place salmon fillets in the pan and cook for 2 minutes.

  6. Reduce heat to medium, cook for 4 minutes, then flip and cook for an additional 4 minutes. Remove salmon and keep warm.

  7. Simultaneously, transfer remaining marinade to a small saucepan. Bring to a gentle boil, reduce to a thick sauce, and then strain.
