Instructions

  1. Preheat the oven to 425 F (220 C).

  2. In a dry, hot skillet, toast sesame seeds until lightly colored, then remove immediately to a plate.

  3. Cut peeled parsnips lengthwise, removing woody cores if present.

  4. Bring a pot of water to a boil, add parsnips and salt, then cook for 2 minutes and drain.

  5. Melt butter and maple syrup in a small saucepan.

  6. Place parsnips in a roasting tin, brush thoroughly with the maple-butter mixture, and season with salt and pepper.

  7. Roast for 30 minutes, shaking frequently, until golden brown.

  8. Sprinkle with toasted sesame seeds and return to the oven for 5 minutes.

  9. Serve immediately or keep warm.
