Combine maple syrup, Dijon mustard, and olive oil in a small bowl for the glaze.

Mix salt, onion powder, garlic powder, marjoram, pepper, and herbes de provence (if using); pat onto both sides of the pork chops.

Grill chops for 15 minutes, turning occasionally.

During the final 3-4 minutes, brush on the glaze, cook for 1 minute, turn, and repeat.
