Instructions

  1. In a large pot, bring 2 quarts of water, brown sugar, maple syrup, and other brine ingredients to a boil, stirring until the sugars dissolve.

  2. Remove the pot from heat, add the remaining 2 quarts of water, and let the brine cool completely before brining poultry or pork.
