Mantecados: Traditional Spanish Crumble Cakes
Traditional Spanish mantecados are delicate, anise-flavored crumble cakes that melt in your mouth.

Instructions

Preheat the oven to 325 F.

Whip vegetable shortening and oil in a large bowl, then mix in sugar until smooth.

Add egg yolks, anisette, lemon peel, lemon juice, and cinnamon; combine well.

Gradually incorporate 7 cups of flour, one cup at a time, along with baking soda, mixing until the dough is smooth and soft.

Scoop dough with a teaspoon and roll into walnut-sized balls; add 1/4 to 1/2 cup additional flour if dough is too sticky.

Place balls on an ungreased cookie sheet, flatten slightly, and brush with beaten egg white.

Bake for 15 to 20 minutes, or until bottom edges are light brown.

Cool cookies on the sheet for 5 minutes before transferring; sprinkle with sugar and cinnamon if desired.
