Mango Pâtes de Fruits

Instructions

Prepare an 8x8-inch pan by lining it with foil or parchment paper and spraying with nonstick cooking spray.

Cook mango pulp and sugar in a medium saucepan over low heat for 30 to 60 minutes until a very thick syrup forms and coats a spoon.

Stir in butter and cook for 3 additional minutes, stirring continuously.

Remove from heat, stir in pectin while hot, and immediately pour into the prepared pan.

Cool to room temperature, then cover and refrigerate overnight until set.

Once set, cut into small squares using a knife dipped in water.

Optionally, roll the squares in granulated sugar to prevent sticking during storage.
