Mango Amba Sauce

Instructions

  1. In a large pan, heat canola oil over medium-low heat.

  2. Add mustard seeds; once they sputter, reduce heat to low and add diced chile pepper, cooking for one minute.

  3. Stir in diced mango and lemon juice.

  4. Gradually add brown sugar and water, in 1/4 cup increments, stirring until sugar dissolves.

  5. Continue cooking and stirring until mango is tender, adding more water if needed.

  6. Mix in cumin, fenugreek, sumac, cayenne pepper, and salt.

  7. Adjust salt to taste.

  8. Remove from heat, cool, then transfer to a lidded jar and refrigerate.

  9. Refrigerate overnight for optimal flavor development; use as desired.
