Malibu Rum Cake
A simple cake made with a box mix and pudding, enhanced with coconut rum and a sweet rum glaze.

Instructions

Preheat oven to 325 F and prepare a 10-inch Bundt pan with cooking spray.

Combine cake mix, rum, vegetable oil, pudding mix, and eggs in a large bowl and beat with an electric mixer for 2 minutes.

Pour the batter into the prepared pan and bake for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.

Cool the cake in the pan for 20 minutes, then invert it onto a platter, remove the pan, and allow the cake to cool completely.

For the glaze, combine sugar and water in a heavy saucepan over medium-high heat, stirring until the sugar dissolves.

Add butter and simmer for about 5 minutes, stirring frequently, until the mixture thickens into a syrup.

Remove from heat, whisk in the rum, and let the glaze cool completely.

Drizzle the cooled glaze evenly over the cooled cake before serving.
