Malaysian Fried Rice With Shrimp and Belacan Recipe

A flavorful Malaysian fried rice dish gets its distinctive taste from rehydrated dried shrimp and belacan (shrimp paste).

Instructions

  1. Soak dried shrimp in water for 20-30 minutes, then drain.

  2. Heat 1 tbsp cooking oil in a wok. Stir-fry string beans over high heat until slightly underdone, then remove and set aside.

  3. Finely crumble or chop belacan.

  4. Add the remaining 3 tbsp cooking oil to the wok. Fry drained dried shrimp and belacan, stirring continuously, until crispy and fragrant.

  5. Add rice and the partially cooked string beans; stir-fry for about 2 minutes until heated through.

  6. Push the fried rice to the sides, creating a well. Pour in the beaten egg and stir until it sets at the bottom but remains wet on top.

  7. Incorporate the egg into the rice by stirring until fully mixed.

  8. Turn off heat. Taste, add salt if needed, and stir before serving.
