Malasadas (Guyanese Pancakes) Recipe

Decadent Guyanese malasadas, a Portuguese-origin pancake, are prepared distinctly from traditional flat varieties.

Instructions

  1. Heat oil in a deep frying pan to 350 F.

  2. Combine flour, sugar, salt, yeast, and optional cinnamon in a large bowl.

  3. Whisk eggs and vanilla extract in a small bowl.

  4. Create a well in the flour mixture, add the whisked eggs and milk, then stir to form a smooth, thick batter.

  5. Cover the batter and let it rise in a warm place for 1.5 hours, or until doubled.

  6. Using 2 tablespoons, scoop and drop batter into the hot oil, frying for 1 minute until browned; do not overcrowd.

  7. Remove malasadas with a slotted spoon and drain on paper towels.

  8. Serve hot.
