Make Your Own Lemon Fudge

Instructions

  1. Line an 8x8-inch pan with foil and spray with cooking spray.

  2. In a heavy 4-quart saucepan, melt butter over low heat. Add sugar, sour cream, and salt; increase heat to medium and stir until sugar dissolves.

  3. Bring the mixture to a boil, stirring frequently. Insert a candy thermometer and continue cooking, stirring often, until it reaches 235 F (113 C).

  4. Remove from heat, then add white chocolate chips and marshmallow cream. Stir vigorously until melted, briefly returning to heat if necessary.

  5. Incorporate lemon oil or extract, lemon zest, optional citric acid, and yellow food coloring; stir until well-mixed. Adjust coloring as desired.

  6. Pour the fudge into the prepared pan and smooth the top. Let it set for 3-4 hours at room temperature or 1-2 hours in the refrigerator.
