Make Your Own Fresh Salmon Chowder

Instructions

  1. Heat butter over medium-low heat, then sauté celery, carrot, and onion for 5 to 7 minutes until tender.

  2. Stir in flour until well blended.

  3. Add chicken broth and potatoes. Bring to a simmer, cover, and cook for 15 to 18 minutes until potatoes and carrots are tender.

  4. Stir in salmon and peas; cook for 2 to 4 minutes until peas are tender.

  5. Add half-and-half or milk, cheese, and parsley. Season with salt and pepper to taste.

  6. Cook, stirring, until the cheese melts and the soup begins to bubble.
