Make Your Own French Gastrique
A classic sweet-and-sour gastrique, popular in French cuisine, perfectly complements pork or poultry dishes.

Instructions

Melt butter in a small saucepan over medium-low heat.

Cook shallots until translucent, about 5 minutes.

Add fruit, sugar, wine or cognac, and vinegar; bring to a light boil over medium-high heat.

Reduce heat to low and simmer for 10-20 minutes until fruit is tender; then remove from heat.

If using berries, strain the mixture; otherwise, purée it in a blender.

Adjust seasoning and tartness as needed.

Serve with your choice of meat.
