Make Your Own French Gastrique

A classic sweet-and-sour gastrique, popular in French cuisine, perfectly complements pork or poultry dishes.

Instructions

  1. Melt butter in a small saucepan over medium-low heat.

  2. Cook shallots until translucent, about 5 minutes.

  3. Add fruit, sugar, wine or cognac, and vinegar; bring to a light boil over medium-high heat.

  4. Reduce heat to low and simmer for 10-20 minutes until fruit is tender; then remove from heat.

  5. If using berries, strain the mixture; otherwise, purée it in a blender.

  6. Adjust seasoning and tartness as needed.

  7. Serve with your choice of meat.
