Make Your Own Daifuku Mochi

Instructions

  1. Heat 2/3 cup water and 1/2 cup sugar in a small pot, then add 1/4 cup anko powder and stir.

  2. Cool the anko filling, then form into 12 small balls and set aside.

  3. Place shiratama-ko in a heat-resistant bowl. In a separate bowl, combine water and sugar.

  4. Gradually pour the water-sugar mixture into the shiratama-ko, stirring.

  5. Microwave the dough for approximately 2 minutes, stir, then continue microwaving until it inflates, stirring quickly after.

  6. Dust a flat pan and your hands with katakuri-ko starch. Carefully transfer the hot mochi from the bowl to the pan.

  7. Dust hands with more starch, divide the mochi into 12 pieces, and flatten each into a round shape.

  8. Place an anko ball in the center of each mochi piece, stretch the mochi to enclose it, and fully round the daifuku.
