Make Your Own Beef Shawarma

Instructions

  1. Combine yogurt, vinegar, garlic, pepper, salt, cardamom pods, allspice, and lemon juice for the marinade, adding olive oil if needed.

  2. Add beef to the marinade, cover, and refrigerate for at least 8 hours.

  3. Cook the marinated beef in a stockpot or large saucepan over medium heat for 45 minutes, adding water as necessary to prevent dryness.

  4. While the beef cooks, mix tahini, lemon juice, yogurt, and garlic for the sauce, then set aside.

  5. In a large bowl, combine onions, tomatoes, and cucumbers with sumac, then incorporate parsley and pickle slices.

  6. Thinly slice or shred the cooked beef.

  7. To assemble, place beef on a pita, add the prepared vegetables, pour sauce, and roll into a wrap.
