Make Turkish Delight (Lokum)

Instructions

Prepare a 9-inch baking pan by greasing and lining it with greased waxed paper.

In one saucepan, combine 1 1/2 cups water, granulated sugar, and lemon juice; heat over medium, stirring until sugar dissolves, then boil, reduce heat, and simmer until 240 F, then set aside.

In a separate saucepan, combine 1 cup cornstarch, cream of tartar, and 2 3/4 cups water; stir over medium heat until lumps disappear, it boils, and reaches a glue-like consistency.

Stir the sugar-lemon juice mixture into the cornstarch mixture for 5 minutes; reduce heat to low and simmer for 1 hour, stirring frequently, until golden.

Stir in the rose water, then pour the mixture into the prepared pan, spread evenly, and allow it to cool overnight.

The next day, combine confectioners' sugar and 1/4 cup cornstarch.

Invert the candy from the pan, remove the waxed paper, and use an oiled knife to cut into 1-inch pieces.

Toss the candy pieces in the confectioners' sugar mixture until fully coated.

Serve immediately or store in a container with waxed or parchment paper layers, ensuring it is not airtight.
