Instructions

  1. Start boiling chicken stock in a deep pot over medium-high heat.

  2. Mince the lower third of the lemongrass stalk, then add it along with the whole upper stalk to the boiling stock. Boil for 5 to 6 minutes until fragrant.

  3. Reduce heat to a simmer, then add garlic, chili, lime leaves, and mushrooms; continue simmering for 5 minutes.

  4. Add shrimp, bell pepper, and cherry tomatoes (if using); simmer for 5 to 6 minutes until the shrimp are pink and plump.

  5. Turn heat to low, then stir in coconut milk and fish sauce. Taste and adjust seasoning as needed.

  6. Serve in bowls garnished with fresh cilantro.
