Make Stir-Fried Chinese Broccoli at Home

Instructions

  1. Rinse and drain Chinese broccoli thoroughly.

  2. In a cup, combine sherry, stock, oyster sauce, and brown sugar for the stir-fry sauce.

  3. Heat oil in a wok or large frying pan over medium-high heat.

  4. Add garlic and chile, if using, to the hot oil and stir-fry for 30 seconds to 1 minute without browning.

  5. Introduce Chinese broccoli and 2 to 3 tablespoons of the stir-fry sauce; cook until the wok dries, then add another 2 to 3 tablespoons of sauce and continue cooking for 4 to 5 minutes.

  6. Pour in the remaining sauce, reduce heat to medium-low, and simmer until the broccoli stems are crunchy.

  7. Optionally, stir in a cornstarch slurry to thicken the sauce and simmer for 30 seconds to 1 minute.

  8. Remove from heat and adjust flavor with additional sugar, oyster sauce, or citrus juice as needed.

  9. Transfer to a serving bowl, pouring any remaining sauce over the top, and serve.
