Instructions

  1. Heat 2 cups vegetable oil to 365 F in a deep fryer or pan.

  2. Cut 1 1/2 to 2 pounds boneless, skinless chicken breasts into 1-inch strips. Whisk 1 1/2 cups buttermilk, 1/2 cup Buffalo wing or hot sauce, and 1/2 teaspoon garlic powder; add chicken, cover, and refrigerate for 2 hours or overnight.

  3. In a shallow bowl, combine 2 cups all-purpose flour, 1 1/2 teaspoons dried oregano, 2 teaspoons garlic powder, 1 teaspoon paprika, 1/2 teaspoon cayenne pepper, 1/2 teaspoon kosher salt, and 1/2 teaspoon black pepper.

  4. Remove chicken from marinade, shake excess, and coat with the flour mixture. Dip each strip again in the buttermilk mixture, then re-coat with the flour mixture.

  5. Fry chicken strips in small batches for 3 to 4 minutes until golden brown. Drain on paper towels and serve with desired dressing.
