Instructions

  1. Preheat deep-fryer or skillet oil to 325 F.

  2. Cut peeled potatoes into 1/3-inch strips, then soak in ice water for one hour.

  3. Drain and thoroughly dry the potatoes.

  4. Fry potatoes in batches for 2 minutes at 325 F for the first blanch, then drain.

  5. Increase oil temperature to 375 F and fry potatoes a second time for 1 1/2 minutes, then drain again.

  6. Season fries with salt, drizzle with truffle oil, and top with optional Parmesan and parsley.
