Instructions

  1. Peel gobo, then diagonally slice it into 2-inch pieces before cutting into thin matchstick strips.

  2. Soak the gobo strips in water, changing the water until clear, then drain thoroughly.

  3. Cut carrots into matchstick strips.

  4. Heat vegetable oil in a frying pan over medium-high heat, then fry gobo for a couple of minutes.

  5. Add carrot strips and stir-fry.

  6. Pour in sake, mirin, and sugar, stirring until the liquid evaporates.

  7. Season with soy sauce and stir-fry well.

  8. Turn off the heat and sprinkle with sesame seeds.
