Make Jelly Out of Guinness Beer

Instructions

  1. Start heating water in a water bath canner and prepare 6 clean half-pint jars.

  2. Pour beer into a 6-quart stockpot, add vinegar, and heat on high.

  3. In a separate bowl, whisk 1/2 cup sugar with pectin. Add this mixture to the beer and whisk to dissolve.

  4. Bring the beer to a boil, then add the remaining sugar and return to a full rolling boil.

  5. Cook at a full rolling boil for 1 minute, then remove from heat and skim any foam.

  6. Ladle jelly into jars, leaving 1/2-inch headspace. Remove air bubbles and wipe jar rims.

  7. Apply lids and rings, then process in the water bath canner for 10 minutes.
