Preheat oven to 375 F and grease 4 loaf pans or 2 baking sheets.
-
Dissolve yeast in 3/4 cup warm water in a large bowl.
-
Stir in 2 2/3 cups warm water, sugar, and salt until dissolved.
-
Incorporate shortening and 4 cups of flour, then gradually add more flour until a soft dough forms.
-
Knead the dough on a floured surface for 10 minutes, adding flour as needed.
-
Place the greased dough in a greased large bowl.
-
Cover and let rise at room temperature for about 1 hour until doubled.
-
Punch down the dough, then knead on a floured surface for 5 minutes to remove air.

Divide dough into 4 portions; roll each into a rectangle, then roll up jelly-roll style, pinching seams and tucking ends.
-
Optionally, sprinkle cornmeal into the prepared pans.
-
Place loaves in pans or on sheets, cover, and let rise for 30 minutes until doubled.
-
Bake for 45 minutes or until golden brown.
-
Remove loaves from pans and cool completely on a rack before freezing.
