Heat oil in a large nonstick skillet; cook eggs with salt, then set aside.

In a large bowl, combine the cooked eggs, shredded cheese, black beans, corn, onion, cilantro, and taco seasoning, adding salt if desired.

Place tortillas on a work surface, evenly distribute the filling on one half of each, and fold over. Let quesadillas cool to room temperature.

Transfer the cooled quesadillas to a parchment-lined plate and freeze for approximately one hour.
