Make-Ahead Duchess Mashed Potatoes

Instructions

  1. Peel and chunk potatoes, then boil them in salted water for 15-20 minutes until tender; drain thoroughly.

  2. Mash the hot potatoes with butter, salt, pepper, egg yolks, and cream until light and fluffy.

  3. Form individual serving-size mounds of potato onto a baking sheet.

  4. Freeze the potato mounds on the baking sheet until solid.

  5. Transfer frozen portions to freezer-safe bags or containers for long-term storage.

  6. To serve, preheat oven to 425 F.

  7. Place frozen duchess potatoes on a lightly greased baking sheet.

  8. Whisk 1 egg with 2 teaspoons of water, then brush the potato mounds lightly with the mixture.

  9. Bake in the preheated oven for 10 minutes, or until golden brown and heated through.
