Make-Ahead Baked Stuffed Potatoes

Instructions

  1. Preheat oven to 425 F.

  2. Scrub and dry potatoes, then pierce each with a fork.

  3. Bake potatoes for 50 minutes until tender.

  4. Slice off the top of each potato and scoop out the pulp, leaving the skin intact.

  5. Beat the scooped potato pulp with 5 tablespoons milk, butter, salt, and pepper, adding more milk if needed.

  6. Fill potato skins with the mixture and sprinkle with Parmesan.

  7. Arrange in a baking dish, cover, and refrigerate for up to one day.

  8. When ready to serve, preheat oven to 375 F.

  9. Bake for 20 to 30 minutes until hot and lightly browned.

  10. Optionally, sprinkle with fresh chopped parsley.
