Make a Cauliflower Cheese Side Dish

Instructions

  1. Preheat the oven to 395 F (200 C).

  2. Remove outer leaves from cauliflower, cut a deep cross in the stem, and steam whole over boiling water for 10 minutes until slightly softened.

  3. Remove cauliflower from heat and allow to cool.

  4. In a large saucepan over low heat, melt butter, then stir in flour, salt, and mustard powder (if using) for 2 minutes.

  5. Increase heat to medium, add milk at once, and whisk constantly until a smooth, thick, and glossy sauce forms (about 5 minutes), adding more milk if too thick.

  6. Stir in grated cheese until melted, then remove from heat.

  7. Break the steamed cauliflower into florets and arrange them in a greased baking dish.

  8. Pour the cheese sauce over the cauliflower, ensuring all florets are covered.

  9. Sprinkle with additional grated cheese and black pepper.

  10. Bake for approximately 30 minutes, or until the sauce is bubbling and golden brown on top.
