Maitake Mushroom Soup Recipe

Instructions

  1. Drain shiitake mushrooms, reserving the liquid; chop all mushrooms.

  2. Heat oil in a soup pot over medium heat.

  3. Add all chopped vegetables to the pot; cook on medium-high, stirring, until soft, about 10 minutes.

  4. Stir in reserved mushroom liquid, stock, tamari, optional cognac, and bay leaf. Bring to a boil, then simmer for 30 minutes.

  5. Add thyme and rosemary; puree the soup until smooth with a stick blender.

  6. Season with salt and pepper; simmer 5 additional minutes.
