Instructions

  1. Rinse fish fillets and pat dry.

  2. Combine salt, pepper, paprika, and optional cayenne; sprinkle evenly on both sides of the fillets.

  3. Heat a large nonstick skillet over medium heat, then add oil and heat until shimmering.

  4. Place fillets in the pan and cook, undisturbed, for 3 to 5 minutes until edges brown. Flip and cook for another 3 to 5 minutes until flaky; remove to a plate.

  5. Spread tartar sauce on both bun halves. Place a cooked fillet on each bottom bun, then top with onion, tomato, and lettuce. Close the sandwich and serve immediately.
