Madras Curry Vegetable Soup Recipe

A savory vegetarian and vegan Indian coconut curried soup is seasoned with Madras curry powder.

Instructions

  1. Bring 2 cups of water to a boil.

  2. Add broccoli and cook for 1 minute, then drain and set aside.

  3. Heat olive oil in a pan, sauté onions until soft, then add garlic, carrot, mushrooms, and cooked broccoli; cook for 2 minutes.

  4. Stir in coconut milk, broth, lime juice, salt, and curry powder; simmer for 5 minutes without boiling.

  5. Remove from heat and serve with fresh cilantro.
