Madras Curry Vegetable Soup Recipe
A savory vegetarian and vegan Indian coconut curried soup is seasoned with Madras curry powder.

Bring 2 cups of water to a boil.

Add broccoli and cook for 1 minute, then drain and set aside.

Heat olive oil in a pan, sauté onions until soft, then add garlic, carrot, mushrooms, and cooked broccoli; cook for 2 minutes.
