Instructions

  1. Heat lard or oil in a medium skillet over medium-high heat.

  2. Sauté onion and serrano chile for 20 seconds, then add machaca and cook for 1 minute.

  3. Stir in tomatoes and seasonings, then remove the mixture from the pan and keep it warm.

  4. In the same pan, scramble the eggs until they are just barely set.

  5. Remove the pan from heat, fold in the machaca mixture, and let sit for an additional minute to finish cooking.

  6. Serve with warm flour tortillas and refried beans, garnished with smashed avocado and tomato slices.
