Macaroni and Smoked Cheddar Cheese

Instructions

  1. Preheat the oven to 350 F and lightly butter a 2 1/2-quart baking dish.

  2. Cook macaroni in boiling salted water as directed on the package; drain thoroughly.

  3. Melt butter in a large saucepan over medium-low heat. Stir in flour until blended, then add salt, pepper, and mustard. Gradually stir in milk, cooking until the mixture thickens. Stir in cheeses until melted and smooth.

  4. Combine the cooked macaroni with the cheese sauce and spoon it into the prepared baking dish.

  5. Mix breadcrumbs with melted butter and sprinkle over the macaroni, then lightly dust with paprika.

  6. Bake for 25 minutes, or until browned and bubbly.
