Macaroni and Ham Casserole

A comforting cheesy and creamy macaroni and ham casserole is an ideal way to utilize leftover holiday ham.

Instructions

  1. Preheat the oven to 350F and grease a 2 1/2-quart casserole dish.

  2. In a large skillet over medium heat, melt butter. Cook diced onion for 3 minutes, stirring, then add bell pepper and cook for 2 more minutes until translucent. Transfer cooked vegetables to a plate.

  3. Add diced ham to the skillet and cook for 3 minutes, stirring.

  4. Start boiling a medium saucepan of water. Add elbow macaroni and 1 teaspoon of salt, then cook according to package directions. Drain well.

  5. In a large bowl, combine the cooked onion, bell pepper, ham, drained macaroni, pimiento, cream of mushroom soup, pepper, 1/2 cup milk, and parsley. Mix thoroughly.

  6. Transfer the macaroni mixture to the prepared baking dish.

  7. Bake for 30 minutes, or until hot and bubbly.

  8. Sprinkle with shredded cheese and continue baking until melted.
