Macaroni and Cheese With Andouille Sausage

Instructions

  1. Preheat the oven to 350 F and lightly grease a 2-quart baking dish.

  2. Cook pasta according to package directions, then drain and set aside.

  3. In a skillet over medium heat, cook sausage and bell pepper until browned and softened.

  4. Add green onion and garlic; cook for 2 minutes. Remove mixture from pan.

  5. In the same pan, melt butter, then whisk in flour. Cook for 2 minutes, then stir in Cajun seasoning and pepper.

  6. Gradually whisk in milk; cook until thickened and bubbly.

  7. Stir in 2 cups of cheese until melted.

  8. Combine the sausage mixture and drained pasta with the cheese sauce.

  9. Spoon the mixture into the prepared baking dish.

  10. Top with remaining cheddar cheese and bake for 20 to 25 minutes, until bubbly and melted.
