Lychee Martini With Homemade Lychee Liqueur

Option 1: To make Lychee Liqueur: Halve 2 cups lychee, place in a 16-ounce jar with lime zest, and cover with 1 1/2 cups vodka.

Seal and shake the jar, then store in a cool, dark place for four weeks, shaking every few days and tasting after two weeks to monitor flavor.

Once desired flavor is reached, strain the vodka through cheesecloth, pressing all liquid from the fruit.

Perform a final strain into a storage bottle using a funnel and cheesecloth.

Add 1 cup simple syrup, seal, shake, and refrigerate for up to three months.

Option 2: To make Lychee Syrup: Combine 1 cup sugar and 1 cup water in a saucepan; bring to a slow boil, stirring until sugar dissolves.

Add 1/2 cup peeled, pitted lychee; reduce heat, cover, and simmer for 10 minutes.

Remove from heat, cool for 30 minutes, then strain fruit from syrup and bottle for refrigeration, lasting two to three weeks.

To prepare the Lychee Martini: In an ice-filled shaker, combine 1 1/2 ounces vodka, 1 1/2 ounces lychee liqueur or syrup, and a splash of lime juice.

Shake thoroughly, then strain into a chilled cocktail glass.
