Instructions

  1. Preheat the oven to 180 C/350 F/Gas 4. Butter and parchment-line a 23 x 33-centimeter / 9 x 13-inch baking tin.

  2. Gently heat golden syrup and butter in a saucepan, stirring until well combined.

  3. In a large bowl, combine oats and salt; pour the butter-syrup mixture over them and stir thoroughly to coat the oats.

  4. Fold in chopped stem ginger and dried fruit, if using, ensuring even distribution.

  5. Transfer the mixture to the prepared tin and spread the surface evenly.

  6. Bake for 25 minutes, or until golden brown; remove from the oven while still slightly soft.

  7. Cool the flapjack in the tin on a wire rack, then cut into squares once completely cold.
