Instructions
-
Combine sugar, water, and lemon juice in a saucepan, heating and stirring until sugar dissolves.
-
Continue to heat the mixture to a boil, brushing the pan sides, and cook until it achieves a medium-brown caramel color. Remove from heat.
-
Meanwhile, heat cream in a separate saucepan until small bubbles form, nearly boiling.
-
Place chopped semi-sweet chocolate in a heat-safe bowl.
-
Return the caramel to heat, then pour the hot cream into it, stirring until fully combined.
-
Pour the hot caramel-cream mixture over the chopped chocolate, allow to sit for one minute, then stir until smooth and well-combined.
-
Cover the ganache, cool to room temperature, then refrigerate for about 2 hours until firm enough to scoop.
-
Scoop 1-inch portions onto a parchment-lined baking sheet, dust hands with cocoa powder, and roll into rounds.
-
Refrigerate the formed truffles for 1 to 2 hours until firm enough for dipping.
-
Melt the chocolate candy coating in the microwave, stirring after every 30 seconds.
-
Dip each truffle into the coating, return to the baking sheet, and immediately sprinkle with desired toppings while the chocolate is wet.
-
Chill for 15 minutes until set, then serve at room temperature and store any excess in the refrigerator.
