Luxurious Caramel Truffles

Instructions

  1. Combine sugar, water, and lemon juice in a saucepan, heating and stirring until sugar dissolves.

  2. Continue to heat the mixture to a boil, brushing the pan sides, and cook until it achieves a medium-brown caramel color. Remove from heat.

  3. Meanwhile, heat cream in a separate saucepan until small bubbles form, nearly boiling.

  4. Place chopped semi-sweet chocolate in a heat-safe bowl.

  5. Return the caramel to heat, then pour the hot cream into it, stirring until fully combined.

  6. Pour the hot caramel-cream mixture over the chopped chocolate, allow to sit for one minute, then stir until smooth and well-combined.

  7. Cover the ganache, cool to room temperature, then refrigerate for about 2 hours until firm enough to scoop.

  8. Scoop 1-inch portions onto a parchment-lined baking sheet, dust hands with cocoa powder, and roll into rounds.

  9. Refrigerate the formed truffles for 1 to 2 hours until firm enough for dipping.

  10. Melt the chocolate candy coating in the microwave, stirring after every 30 seconds.

  11. Dip each truffle into the coating, return to the baking sheet, and immediately sprinkle with desired toppings while the chocolate is wet.

  12. Chill for 15 minutes until set, then serve at room temperature and store any excess in the refrigerator.
