Instructions

  1. Heat spinach in a large pot over medium-high heat for 5-6 minutes until soft, bright green, and reduced.

  2. Transfer the hot spinach immediately into a large bowl of ice water, then drain and squeeze out excess water.

  3. Place the squeezed spinach in a food processor and purée until smooth.

  4. Meanwhile, heat the cream over medium heat to reduce it slightly.

  5. Combine the puréed spinach, butter, reduced cream, and cheese in the pot.

  6. Cook over medium heat, stirring constantly until hot.

  7. Season with salt and pepper, then serve.
